Crust Los Gatos opened to make one thing very well — a sandwich on bread that earns its place on your plate. Everything else flows from there.
It starts at five in the morning.
Long before the sandwich line opens, somebody is back here pulling loaves out of the oven. Sourdough — slow-fermented for nearly a day, hand-shaped, baked dark enough to crackle when you press the heel.
We don't buy bread. We make it. That choice changes everything about the sandwich that lands in your hand — the structure, the flavor, the way it holds together as you eat it. It also changes the rhythm of our day: we plan around the bread, not the other way around.
Premium meats. Real vegetables. A vegan menu we're proud of.
House-roasted turkey. Slow-cured pastrami. Black forest ham with the right smoky sweetness. We pick proteins the way a good butcher would — not the way a procurement spreadsheet would.
The vegetables get the same care: tomatoes ripened, lettuce crisp, peppers roasted, avocado that's actually ripe. And the vegan menu — built around our house hummus and roasted-pepper trio — isn't an afterthought. It's a sandwich a meat-eater will reach for on a Tuesday and not feel like they're missing anything.

Service with a pulse — not a screen.
A lot of places have started handing you an iPad and calling that progress. We don't. You walk in, somebody greets you, and you order a sandwich the way humans have ordered sandwiches for a hundred years: by talking to another human.
It costs us a little more. We think it's worth it. The team behind the counter remembers your usual. They'll tell you what's good today. They'll fix it if something isn't right. That's not a feature — that's just how a neighborhood deli is supposed to work.
